Keto (and Gluten Free) Bread

Super easy keto bread, with only 5g of carbs per slice!!

Ingredients:

180 g Blanched Almond Meal (I buy a very fine almond meal, as the flour can be expensive)
65 g Pysillium Husk (the whiter the better)
35 g Lupin Flour
30 g Coconut Flour
1 Tbsp Bi-carb Soda
1 1/2 tsp Xanthum Gum
1 1/2 tsp Sea Salt
1 Tbsp Apple Cider Vinegar
4 egg whites – whisked

Yeast Mix:
1 x 7g Sachet Dry Yeast
330 ml Warm Water
2 tsp Sugar

Combine the Yeast Mix ingredients in a bowl and whisk togther. Let stand for 5 to 10 minutes to activate the yeast.

Add all dry ingredients to a large bowl, or bench top mixer. Using an electric mixer, mix until all ingredients are blended well.

With the mixer running on low, add the Apple Cider Vinegar, then egg whites, then finally the yeast mix. Continue to beat on low for about 15 to 30 seconds until all ingredients have come together.

Gently turn out onto a clean benchtop and gently pull together using hands to form a loaf shape. Don’t kneed or push down on the loaf.

Place into the bread tin and make slices through the loaf diagonally along the full length of the loaf. Slices should be around 4 to 5cm apart and 1 cm deep.

Cover the tin with plastic wrap and place in a warm spot in the kitchen to rise for 1 to 2 hours. I use the oven on 30°C during winter.

Remove the tin from the oven (if using to help rise) and turn up to 200°C. Once up to temperature, remove the plastic wrap and place the loaf on the shelf in the middle of the oven (or just below). Don’t place the tin in the top of the oven.

Bake for 30 minutes, then turn the oven down to 180°C and bake for a further 30 minutes. Tap the bottom of the loaf to make sure it’s cooked – if it still feels heavy place the loaf back into the oven for a further 10 minutes.

Once baked, turn the loaf out onto a cooling rack. Allow to cool fully before slicing.

Finished loaf approx 650g. Around 16 slices at 1cm. 40g per slice.

Carbs total 86g per loaf = 5g per slice

If your loaf is a little purple looking inside – don’t panic! Some brands of pysillium husk will turn your loaf purple! If this creeps you out a little, change brands – I buy mine from Aldi.
