Gluten Free Banana Bread

Ingredients

80g unsalted butter
1 egg
1 teaspoon vanilla extract
3 medium overripe bananas
1 1/2 cups gluten-free self-raising flour (we use White Wings)
3/4 cup granulated sugar
1 teaspoon Xantham Gum
Large pinch of salt

Pre-heat the oven to 180 °C

Grease a loaf pan (approx 8×4 inches) generously with cooking spray.

Melt the butter in a large mixing bowl in the microwave. Let it cool down before adding the egg and vanilla. Use a whisk to combine – beat slightly.

Add the banana and mash with a potato masher. Mix together with a spatular.

Sift in the flour, xantham gum,  sugar and salt.

Use the spatular to mix thoroughly.

Pour into the loaf pan and place in the oven.

Bake for 50 minutes to 1 hour until cooked.

Remove from the oven and leave to rest for 15 minutes before turning out onto a cooling rack.
