A delicious spicy stir fried pork dish that’s ready in 15 minutes!
You can use pre-cut pork, sold at most Asian grocery stores, or just get a piece of pork belly at your local butcher and slice it into thin pieces about 1/2 cm thick. You could also replace the pork with chicken breast, but it won’t have that lovely fat that makes this dish so delicious.
Serves 3 to 4
2 heaped tbsp hot pepper paste (gochujang)
3 tsp soy sauce
1 tbsp sugar
1 1/2 tbsp hot pepper flakes (gochu-garu – labeled 태양초 on the packaging)
1/4 tsp ground black pepper
1 tbsp sesame oil
500-700g pork belly, sliced (as above)
5 garlic cloves, minced (2 tsp minced garlic in jar)
1 tsp minced ginger
1 medium size onion, sliced
4 green onions, sliced diagonally
1 tsp sesame seeds
In a bowl, combine the hot pepper paste, soy sauce, sugar, hot pepper flakes, black pepper and sesame oil. Add the pork and stir through.
Heat up a large, thick skillet (or pan) over medium high heat.
Add the pork and stir fry for a few minutes. Add the garlic, ginger, onion and green onions. Stir fry for 10 to 12 minutes until the pork is fully cooked and a little crispy. The fat will have started to render down into the pan which will help the pork crisp up.
Transfer to a serving plate, sprinkle with sesame seeds and serve with rice, kimchi, lettuce, ssamjang and whatever other salad ingredients you prefer.
